For the Mousse:

1 cup heavy whipping cream

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

8 ounces cream cheese, softened

1/4 cup raspberry puree (fresh or frozen)

For the Raspberry Swirl:

1/2 cup fresh raspberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

For the Chocolate Base:

1 cup chocolate cookie crumbs (like Oreos)

4 tablespoons unsalted butter, melted

Instructions
 

Prepare the Chocolate Base:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the chocolate cookie crumbs and melted butter. Stir until the crumbs are well coated and resemble wet sand.

        - Press the mixture firmly into the bottom of silicone molds or a mini muffin tin to form the base. Bake for 5-7 minutes, then let it cool completely while you prepare the mousse.

          Make the Raspberry Swirl:

            - In a small saucepan, combine the fresh raspberries, granulated sugar, and lemon juice. Cook over medium heat for about 5 minutes, possibly mashing the raspberries to release juices, until the mixture is syrupy. Remove from heat and let cool slightly.

              Prepare the Mousse:

                - In a mixing bowl, using an electric mixer, beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to mix until stiff peaks form.

                  - In another bowl, beat the softened cream cheese until smooth and creamy. Gradually fold in the whipped cream mixture, being careful not to deflate it.

                    - Carefully fold in the raspberry puree, creating a swirl effect without fully combining.

                      Assemble the Mousse Bites:

                        - Spoon or pipe the raspberry mousse mixture over the cooled chocolate cookie bases in the molds.

                          - Add a drizzle of the raspberry swirl on top of each mousse bite for decoration, swirling it in gently with a toothpick for a marbled effect.

                            Chill and Serve:

                              - Place the assembled mousse bites in the refrigerator for at least 2-4 hours, or until set.

                                - Once set, carefully remove the bites from the molds and serve chilled. Garnish with a few whole raspberries or a dollop of whipped cream if desired.
