2 cups cooked rice (preferably day-old)

1/2 cup grated carrot

1/4 cup green onions, finely chopped

1/4 cup fresh parsley, finely chopped

1/4 cup grated cheese (cheddar or mozzarella)

1/2 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup all-purpose flour (plus extra for coating)

1 large egg, beaten

Prepare the Rice: If you are using freshly cooked rice, make sure it is completely cooled. Day-old rice works best as it’s drier and holds together better.

    Mix the Ingredients: In a large mixing bowl, combine the cooked rice, grated carrot, chopped green onions, parsley, grated cheese, garlic powder, onion powder, paprika, salt, and black pepper. Stir until well mixed.

      Bind the Mixture: Add the flour and the beaten egg to the rice mixture. Stir until everything is incorporated and the mixture forms a cohesive mass. If it’s too sticky, sprinkle in a bit more flour until you can handle it easily.

        Form the Patties: Wet your hands slightly to prevent sticking, then take a small portion of the mixture (about 1/3 cup), flatten it into a patty shape about 1/2 inch thick. Repeat for the remaining mixture. You should yield about 8-10 patties.

          Coat the Patties: Lightly coat each patty in flour for a crispier texture when frying.

            Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. You can test if the oil is ready by dropping a small piece of the mixture in; it should sizzle immediately.
