Roasted Balsamic Vinaigrette with Herbs

1 cup balsamic vinegar

2 tbsp honey or maple syrup (for a vegan option)

1/2 cup extra virgin olive oil

4 cloves garlic, unpeeled

1 tbsp Dijon mustard

1 tsp dried oregano

1 tsp dried thyme

1 tsp fresh rosemary, finely chopped (or 1/2 tsp dried)

Salt and freshly ground black pepper, to taste

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Place the unpeeled garlic cloves on a small piece of aluminum foil, drizzle with a teaspoon of olive oil, and season with salt and pepper. Wrap the foil around the garlic to create a sealed pouch and roast in the oven for about 20-25 minutes until soft and fragrant.

    Prepare the Vinaigrette Base: In a medium bowl, whisk together the balsamic vinegar, honey (or maple syrup), and Dijon mustard until well combined.

      Incorporate Olive Oil: Slowly pour in the extra virgin olive oil while continuing to whisk. This will help to emulsify the mixture, giving it a smooth texture.

        Add Herbs and Seasoning: Once the garlic is roasted, allow it to cool for a few minutes, then squeeze the cloves out of their skins into the vinaigrette mixture. Add the dried oregano, thyme, and fresh rosemary to the bowl. Season with salt and pepper to taste.
