Roasted Broccoli & Cheddar Quinoa Bake

1 cup quinoa, rinsed and drained

2 cups vegetable broth or water

4 cups broccoli florets (fresh or frozen)

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika (optional)

1 cup sharp cheddar cheese, shredded (plus extra for topping)

1/2 cup grated Parmesan cheese

2 large eggs

1/2 cup milk (dairy or non-dairy)

1/4 cup chopped fresh parsley (or 2 tablespoons dried)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Broccoli: On a baking sheet, toss the broccoli florets with olive oil, salt, pepper, garlic powder, onion powder, and smoked paprika if using. Spread them out in a single layer and roast in the preheated oven for 15-20 minutes, or until tender and slightly crispy on the edges.

      Cook the Quinoa: While the broccoli is roasting, combine the rinsed quinoa and vegetable broth in a medium-sized saucepan. Bring to a boil over medium-high heat, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Remove from heat and fluff with a fork.

        Mix the Cheese Sauce: In a large mixing bowl, whisk together the eggs, milk, remaining shredded sharp cheddar cheese, and grated Parmesan cheese until well combined. Add a pinch of salt and pepper to taste.

          Combine the Ingredients: Stir the cooked quinoa into the cheese mixture until evenly incorporated. Gently fold in the roasted broccoli and the chopped parsley.

            Prepare the Bake Dish: Lightly grease a 9x9 inch (or similar size) baking dish. Pour the quinoa mixture into the dish and spread it out evenly. Top with additional cheddar cheese for a gooey finish.

              Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the top is golden and bubbly.
