Roasted Butternut Squash and Sausage Pasta

1 medium butternut squash, peeled and cubed

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon dried thyme

1 pound Italian sausage (sweet or spicy, your choice), casings removed

3 cloves garlic, minced

1/2 cup onion, diced

8 ounces pasta (penne or farfalle work well)

1/2 cup heavy cream

1/2 cup grated Parmesan cheese, plus more for serving

Fresh basil or parsley, for garnish

Optional: crushed red pepper flakes, for added heat

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Squash: In a large mixing bowl, combine the cubed butternut squash with 1 tablespoon of olive oil, salt, pepper, and dried thyme. Toss to coat evenly.

      Roast the Squash: Spread the seasoned squash on a baking sheet in a single layer and roast in the preheated oven for about 25-30 minutes, or until tender and caramelized, turning halfway through for even cooking.

        Cook the Pasta: While the squash is roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

          Sauté the Sausage: In a large skillet over medium heat, add the remaining tablespoon of olive oil. Add the sausage, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 5-7 minutes.

            Add Aromatics: Stir in the diced onion and minced garlic into the skillet with the sausage. Cook for an additional 3-4 minutes until the onions are translucent and fragrant.

              Combine Ingredients: Lower the heat and add the roasted butternut squash to the skillet, followed by the cooked pasta. Pour in the heavy cream and half of the reserved pasta water, tossing everything together. If the mixture seems dry, gradually add more reserved pasta water until you reach your desired consistency.

                Incorporate Cheese: Stir in the grated Parmesan cheese until it melts and melds into the dish. Adjust seasoning with salt, pepper, and red pepper flakes, if using.
