2 large heads of garlic

2 tablespoons olive oil, plus more for drizzling

1 teaspoon dried thyme

1 teaspoon dried oregano

1 medium zucchini, thinly sliced

1 red bell pepper, sliced

1 cup cherry tomatoes, halved

1 cup spinach leaves

1 cup crumbled feta cheese (optional for a vegan version)

4 flatbreads or pita breads

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the tops off the garlic heads, exposing the cloves. Drizzle with olive oil, wrap in foil, and roast for about 30-35 minutes, until soft and caramelized. Allow to cool slightly, then squeeze the roasted garlic into a bowl and mash it into a paste.

    Prepare the Veggies: In a large bowl, combine the zucchini, red bell pepper, cherry tomatoes, and spinach. Drizzle with olive oil, sprinkle with thyme, oregano, salt, and pepper, and toss to coat evenly.

      Assemble the Flatbreads: On each flatbread, spread a generous layer of the roasted garlic paste. Top with the seasoned vegetables and sprinkle feta cheese, if using.

        Roast the Flatbreads: Place the assembled flatbreads on a baking sheet or directly on the oven rack. Bake for about 10-12 minutes, or until the edges are crispy and the veggies are tender.
