Roasted Peach and Burrata Salad

4 ripe peaches, halved and pitted

2 tablespoons olive oil, plus extra for drizzling

1 tablespoon honey

Salt and freshly ground black pepper, to taste

5 ounces burrata cheese

4 cups mixed greens (such as arugula, spinach, and frisée)

1/4 cup toasted walnuts, roughly chopped

1/4 cup thinly sliced prosciutto (optional)

2 tablespoons balsamic glaze

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Peaches: In a large bowl, toss the peach halves with olive oil, honey, salt, and pepper until evenly coated.

      Roast Peaches: Place the peach halves cut side up on a baking sheet lined with parchment paper. Roast in the oven for about 20 minutes, or until the peaches are tender and caramelized. Remove from the oven and let cool slightly.

        Assemble Salad: In a large salad bowl, combine the mixed greens and gently toss them with a drizzle of olive oil and a pinch of salt.

          Add Burrata: Place the roasted peach halves on top of the greens, along with spoonfuls of burrata cheese. If using, layer the prosciutto on top.
