2 large red bell peppers

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1/2 teaspoon garlic powder

Salt and pepper to taste

200g feta cheese, crumbled

1/4 cup fresh basil leaves, chopped

1/4 teaspoon red pepper flakes (optional)

4 slices of crusty bread (like sourdough or ciabatta)

Extra virgin olive oil for drizzling

Fresh lemon juice (for garnish)

Instructions
 

Roast the Peppers: Preheat your oven to 425°F (220°C). Cut the bell peppers in half and remove the seeds and stems. Place them cut side down on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Roast for about 25-30 minutes, until the skins are blistered and charred.

    Remove Skins: Once roasted, remove the peppers from the oven and immediately place them in a bowl. Cover with plastic wrap or a kitchen towel for about 10 minutes to steam. This will help loosen the skins. Once cool enough to handle, peel off the charred skins and slice the peppers into strips.

      Season the Feta: In a small bowl, combine the crumbled feta cheese with balsamic vinegar, garlic powder, black pepper, and red pepper flakes (if using). Mix until well combined.
