2 medium zucchini, sliced into thin strips

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

4 large whole wheat or spinach tortillas

1 cup Greek yogurt or dairy-free alternative

1 tablespoon tahini

Juice of 1 lemon

1 cup fresh spinach leaves

1/2 cup cherry tomatoes, halved (optional)

1/4 cup crumbled feta cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare Veggies and Chickpeas: On a baking sheet, spread out the zucchini strips and chickpeas. Drizzle with olive oil, and sprinkle smoked paprika, garlic powder, cumin, salt, and pepper. Toss everything to coat evenly.
