Salmon Tacos with Mango Slaw

For the Salmon:

1 lb (450g) fresh salmon fillet, skin removed

2 tbsp olive oil

1 tsp chili powder

1 tsp cumin

1/2 tsp garlic powder

1/2 tsp smoked paprika

Salt and pepper to taste

Juice of 1 lime

For the Mango Slaw:

1 ripe mango, peeled and diced

2 cups shredded green cabbage

1/2 cup shredded carrots

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tbsp honey (or agave syrup for vegan option)

Salt and pepper to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Extra cilantro for garnish

Instructions
 

Prepare the Salmon Marinade: In a small bowl, mix together olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and lime juice. Place the salmon in a shallow dish and pour the marinade over it. Let it marinate in the fridge for at least 20 minutes.

    Make the Mango Slaw: In a large bowl, combine diced mango, shredded cabbage, shredded carrots, red onion, and cilantro. In a separate small bowl, whisk together lime juice, honey, salt, and pepper. Pour this dressing over the slaw and toss to combine evenly. Adjust seasoning as needed. Set aside.

      Cook the Salmon: Preheat a grill or stovetop grill pan over medium-high heat. Once hot, place the marinated salmon on the grill. Cook for about 4-5 minutes per side, or until the salmon flakes easily with a fork. Remove from the grill and let it rest for a few minutes before slicing.

        Warm the Tortillas: While the salmon is resting, warm the tortillas on the grill (about 30 seconds on each side) or in a skillet until pliable.

          Assemble the Tacos: Flake the salmon into bite-sized pieces. For each taco, place a portion of the flaked salmon onto a warm tortilla, add a generous amount of mango slaw, and garnish with extra cilantro.
