4 bone-in pork chops (about 1 inch thick)

2 tablespoons olive oil

Salt and pepper, to taste

1 medium onion, thinly sliced

2 medium apples (Granny Smith or Honeycrisp), cored and sliced

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon cinnamon

½ cup apple cider

1 tablespoon Dijon mustard

2 tablespoons brown sugar

2 tablespoons balsamic vinegar

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork Chops: Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Pork Chops: In a large skillet, heat olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until they have a nice golden-brown crust. Remove them from the skillet and set aside.

      Sauté the Onions and Apples: In the same skillet, add the sliced onions and apples. Sauté for about 4-5 minutes until the onions are translucent and the apples begin to soften.

        Add Flavorings: Stir in the minced garlic, thyme, and cinnamon. Cook for another minute until fragrant.

          Build the Sauce: Pour in the apple cider, then add the Dijon mustard, brown sugar, and balsamic vinegar. Stir to combine all the ingredients and bring the mixture to a simmer.

            Return Pork Chops: Place the seared pork chops back into the skillet, spooning some of the sauce over the top. Reduce the heat to low, cover, and let simmer for about 10-15 minutes, or until the pork chops are cooked through (internal temperature of 145°F or 63°C).

              Thicken the Sauce (Optional): If you prefer a thicker sauce, after the pork chops are cooked, remove them from the skillet and increase the heat to medium-high. Reduce the sauce for 2-3 minutes, stirring occasionally until it thickens slightly.
