Sausage and Potato Breakfast Skillet

4 medium russet potatoes, diced into small cubes

1 lb (450g) breakfast sausage (pork, turkey, or your choice)

1 medium onion, diced

1 bell pepper (red or green), diced

2 cloves garlic, minced

1 tsp smoked paprika

½ tsp black pepper

½ tsp salt (or to taste)

½ tsp dried thyme

4 large eggs

2 tbsp olive oil

Fresh parsley or chives, chopped (for garnish)

Hot sauce (optional, for serving)

Instructions
 

Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt, pepper, and smoked paprika. Stir to coat and cook for about 10-15 minutes, or until the potatoes are fork-tender and crispy, stirring occasionally.

    Prepare the Sausage: While the potatoes are cooking, in a separate pan, heat the remaining tablespoon of olive oil over medium heat. Add the breakfast sausage and cook until browned and fully cooked, breaking it apart with a spatula. Once cooked, remove the sausage from the skillet and set aside, leaving the drippings in the pan.

      Sauté Vegetables: In the same skillet with the sausage drippings, add the onion and bell pepper. Sauté for about 5 minutes until they are softened, then add the minced garlic and dried thyme. Cook for an additional 2 minutes, stirring constantly.

        Combine Ingredients: Once the vegetables are tender, return the cooked sausage to the skillet along with the crispy potatoes. Mix everything well and let it cook for another 5 minutes on medium heat, allowing the flavors to meld together.

          Add Eggs: Create four wells in the mixture and crack an egg into each well. Cover the skillet with a lid and let the eggs cook for about 5-7 minutes, or until the egg whites are set and the yolks reach your desired level of doneness.

            Garnish & Serve: Once cooked, remove the skillet from heat. Garnish with fresh parsley or chives and serve hot with a splash of hot sauce if desired.
