1 pound of fresh green beans, trimmed

1/3 cup sliced almonds

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon lemon zest

1 tablespoon fresh lemon juice

Salt and freshly cracked black pepper, to taste

A pinch of red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Green Beans: Start by washing the green beans thoroughly. Trim the ends off and cut them into 2-inch pieces for easy handling while cooking.

    Toast the Almonds: Heat a dry skillet over medium heat. Add the sliced almonds and toast them, stirring frequently, for about 3-5 minutes or until they’re golden brown and fragrant. Be careful not to burn them! Once toasted, transfer them to a small bowl and set aside.

      Sauté the Green Beans: In the same skillet, add the olive oil over medium heat. Once the oil is hot, add the minced garlic and sauté for about 30 seconds until aromatic (be cautious not to burn the garlic).

        Cook the Beans: Add the trimmed green beans to the skillet and sprinkle with a bit of salt, black pepper, and red pepper flakes if using. Sauté them for about 5-7 minutes, stirring occasionally, until they are tender yet still crisp.

          Add Flavors: Once the green beans are cooked, add the lemon zest and lemon juice. Toss everything together so that the beans are well coated with the flavors.

            Finish with Almonds: Finally, remove the skillet from heat and fold in the toasted almonds. Adjust the seasoning with more salt and pepper if needed.

              Serve: Transfer the sautéed green beans to a serving platter. Garnish with chopped fresh parsley for a pop of color and an extra touch of flavor.
