Savory Beef and Bean Chili in 30 Minutes

Ingredients
  

1 lb ground beef (preferably lean)

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 medium yellow onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, with juices

2 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp dried oregano

1/4 tsp cayenne pepper (adjust for heat preference)

Salt and black pepper to taste

2 tbsp olive oil

Optional toppings: shredded cheese, sour cream, green onions, avocado

Instructions
 

Heat the Pan: In a large pot or Dutch oven, heat the olive oil over medium heat.

    Sauté Aromatics: Add the diced onion and red bell pepper to the pan. Sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Brown the Beef: Increase the heat to medium-high and add the ground beef to the pot. Cook until browned, breaking it up with a spoon, about 5-6 minutes. Drain any excess fat if necessary.

        Spice it Up: Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and black pepper. Cook for 1-2 minutes until the spices are fragrant.

          Add Beans and Tomatoes: Pour in the drained black beans, kidney beans, and diced tomatoes (with their juices). Stir to combine all the ingredients.

            Simmer: Bring the chili to a gentle simmer. Reduce the heat to medium-low and let it cook for 10 minutes, stirring occasionally to prevent sticking.

              Taste and Adjust: After 10 minutes, taste the chili and adjust seasoning if necessary. Add more salt, pepper, or cayenne according to your preference.

                Serve: Ladle the chili into bowls and top with your choice of shredded cheese, sour cream, chopped green onions, and avocado if desired.
