1 lb ground beef (80/20 or 90/10)

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

2 medium carrots, peeled and sliced thin

1 zucchini, chopped

1 cup cherry tomatoes, halved

1 cup green beans, trimmed and cut into 1-inch pieces

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1 cup beef broth

Fresh parsley, chopped (for garnish)

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat.

    Brown the Beef: Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula as it cooks, about 5 minutes. Drain excess fat if needed.

      Sauté the Aromatics: Add the diced onions and minced garlic to the skillet. Sauté for about 2-3 minutes until the onions become translucent.

        Add the Veggies: Stir in the diced bell pepper, carrots, and zucchini. Cook for an additional 5 minutes until they start to soften.

          Season: Sprinkle in the dried oregano, paprika, salt, and pepper. Mix well to combine all the flavors.

            Add Liquid: Pour in the beef broth and bring the mixture to a simmer. Stir in the cherry tomatoes and green beans.
