Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1/4 cup fresh chives, chopped

3/4 cup whole milk

1 large egg (for egg wash)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Whisk together until well combined.

Cut in Butter: Add the cold cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Chives: Stir in the shredded cheddar cheese and chopped chives, mixing until evenly distributed.

Combine Wet Ingredients: In a separate bowl, whisk together the whole milk and the egg until well combined.

Form the Dough: Make a well in the center of the flour mixture and gradually pour in the milk mixture. Using a fork, gently mix until just combined. Do not overwork the dough; it should be slightly sticky.

Shape the Scones: Turn the dough out onto a floured surface and gently knead it just a couple of times to bring it together. Pat the dough into a circle about 1 inch thick. Cut into 8 wedges; place them on the prepared baking sheet.

Brush with Egg Wash: Beat the remaining egg and brush it over the tops of the scones for a golden finish.

Bake: Bake in the preheated oven for 15-18 minutes or until the scones are puffed up and golden brown on top.

Cool and Serve: Remove from the oven and let the scones cool on the baking sheet for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature!
