2 cups uncooked white rice

4 cups chicken broth (low-sodium)

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups fresh spinach, chopped

1 cup frozen peas and carrots (or fresh if available)

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt (or to taste)

1 cup shredded cheddar cheese

1 tablespoon olive oil

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and season with salt, pepper, thyme, and paprika. Cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Aromatics: In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

        Combine Ingredients: In a large mixing bowl, combine the uncooked rice, chicken broth, spinach, frozen peas and carrots, sautéed onion and garlic, and the cooked chicken. Stir everything together until well mixed.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

            Cheese It Up: Sprinkle the shredded cheddar cheese evenly over the top of the casserole.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the rice is tender and the cheese is bubbly and slightly golden.

                Let it Rest: Once done, let the casserole sit for about 5 minutes to cool slightly and set before serving.

                  Serve: Garnish with freshly chopped parsley and serve warm. Enjoy your comforting chicken and rice casserole!
