1 lb (450g) boneless, skinless chicken thighs, sliced into thin strips

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 medium bell pepper (any color), sliced

1 medium carrot, julienned

1 cup broccoli florets

1/2 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken thighs, soy sauce, oyster sauce, and cornstarch. Mix well to ensure the chicken is evenly coated. Allow it to marinate for at least 15 minutes (or up to 1 hour in the refrigerator for enhanced flavor).

    Prepare the Vegetables: While the chicken is marinating, wash and prepare all your vegetables. Set them aside to have ready for the stir-fry.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated chicken in a single layer. Sear for about 3-4 minutes until the chicken is browned, stirring occasionally. Remove the chicken to a plate and set aside.

        Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of oil. Toss in the minced garlic and ginger, stirring for about 30 seconds until fragrant. Add the bell pepper, carrot, broccoli, and snap peas. Stir-fry the vegetables for 3-5 minutes, until they are vibrant and tender-crisp.

          Combine & Finish: Return the cooked chicken to the pan with the vegetables. Season with salt and pepper to taste. Stir everything together for another 2 minutes until heated through and well-mixed.

            Garnish & Serve: Remove the stir-fry from heat. Serve hot, garnished with sliced green onions and a sprinkle of sesame seeds. Enjoy this delicious dish over steamed rice or noodles for a complete meal!
