3 cups cooked, shredded chicken

1 can (10 oz) enchilada sauce (red or green, based on preference)

1 cup sour cream

2 cups black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

2 cups shredded cheese (cheddar and Monterey Jack blend works well)

8 corn tortillas, cut into quarters

1 medium onion, diced

2 cloves garlic, minced

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (adjust for spice level)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Avocado slices for serving (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, 1/2 cup of enchilada sauce, sour cream, black beans, corn, diced onion, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Mix until all the ingredients are well incorporated.

      Layer the Casserole: In a 9x13 inch baking dish, start layering the casserole. Begin with a layer of the chicken mixture, followed by a layer of tortilla quarters. Sprinkle with 1 cup of shredded cheese. Repeat the layers (chicken mixture, tortillas, cheese) until all ingredients are used, finishing with a layer of tortilla quarters topped with the remaining enchilada sauce and cheese.

        Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

          Serve: Once done, remove from the oven and let it rest for about 10 minutes. Garnish with fresh cilantro and avocado slices if desired. Serve warm and enjoy!
