4 large eggs

2 cups fresh spinach, chopped

1/2 cup shredded cheese (cheddar or feta work well)

1 small onion, finely chopped

1 clove garlic, minced

4 whole wheat tortillas

2 tablespoons olive oil

Salt and pepper to taste

Optional toppings: diced tomatoes, avocado slices, salsa

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes until translucent. Then, add the minced garlic and chopped spinach. Cook for another 2-3 minutes until the spinach is wilted.

    Prepare the Eggs: In a medium bowl, whisk together the eggs, salt, and pepper. Pour the beaten eggs into the skillet with the sautéed vegetables. Stir gently to combine and cook until the eggs are just set, about 4-5 minutes. Sprinkle the shredded cheese on top and allow it to melt.

      Assemble the Wraps: Lay the whole wheat tortillas flat on a clean surface. Evenly distribute the egg and spinach mixture among the tortillas, placing it in the center of each. Fold the sides over the filling, then roll the wrap from the bottom up to enclose the filling completely.

        Toast the Wraps: Wipe out the skillet and return it to medium heat. Place each wrap seam-side down in the skillet (you may need to do this in batches). Cook for about 2-3 minutes on each side until the wraps are golden brown and slightly crispy.

          Serve: Cut the wraps in half diagonally and serve hot. Add optional toppings like diced tomatoes, avocado slices, or salsa, if desired.
