1 cup green or brown lentils, rinsed

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

1 cup mushrooms, chopped

1 cup vegetable broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (homemade or store-bought)

1 cup grated cheese (cheddar or your choice, optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Lentils: In a medium pot, combine the rinsed lentils and 3 cups of water. Bring to a boil, then reduce heat to a simmer and cook until tender, about 25-30 minutes. Drain and set aside.

    Brown the Sausage: In a large skillet over medium heat, add the sausage. Cook until browned and cooked through, breaking it up into small pieces as it cooks. Remove the sausage from the skillet and set aside, leaving any rendered fat in the pan.

      Sauté the Vegetables: In the same skillet, add the diced onion, carrots, and celery. Cook until softened, about 5-7 minutes. Add the garlic and mushrooms, and continue cooking for another 5 minutes until the mushrooms are tender.

        Combine Ingredients: Add the cooked sausage back into the skillet along with the cooked lentils. Stir in the vegetable broth, tomato paste, Worcestershire sauce, thyme, rosemary, and season with salt and pepper. Allow the mixture to simmer for about 10 minutes, letting the flavors meld and thicken slightly.

          Layer the Pie: Preheat your oven to 400°F (200°C). In a baking dish, spread the lentil and sausage mixture evenly on the bottom. Top it with a generous layer of mashed potatoes, smoothing it out with a spatula. If using, sprinkle the grated cheese on top of the mashed potatoes.

            Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and crispy.
