1 cup jasmine rice

1 lb medium shrimp, peeled and deveined

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1/2 cup corn kernels (fresh or frozen)

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and the water is absorbed. Fluff with a fork and set aside.

    Prepare the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
