Ingredients

1 pre-made pie crust (store-bought or homemade)

6 large eggs

1 cup heavy cream

1 cup milk

1 cup sun-dried tomatoes, chopped (preferably oil-packed, drained)

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Pie Crust: If using a homemade pie crust, roll it out and fit it into a 9-inch pie dish. If using a store-bought crust, follow the package instructions. Prick the bottom with a fork to prevent bubbling.

Sauté the Onion and Garlic: In a skillet over medium heat, add a splash of olive oil, then sauté the chopped onion until translucent, about 4-5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat and let cool slightly.

Whisk the Egg Mixture: In a mixing bowl, whisk together the eggs, heavy cream, and milk until fully blended. Season with salt, pepper, oregano, and basil.

Combine Ingredients: Add the sautéed onion and garlic to the egg mixture, followed by the chopped sun-dried tomatoes, mozzarella cheese, and feta cheese. Gently fold to combine, ensuring even distribution.

Fill the Crust: Pour the filling into the prepared pie crust, spreading it evenly.

Bake: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the top is golden and a knife inserted in the center comes out clean.

Cool and Serve: Once cooked, allow the quiche to cool for about 10 minutes before slicing. Garnish with fresh basil leaves if desired.

Enjoy: Serve warm or at room temperature as a delightful brunch or light dinner option!
