Savory Turkey and Sweet Potato Skillet

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup kale or spinach, chopped

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp dried oregano

Salt and pepper to taste

2 tbsp olive oil

1/2 cup chicken broth (or vegetable broth)

Fresh parsley for garnish (optional)

Instructions
 

Sauté Onions and Peppers: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper. Sauté for 3-5 minutes until they soften and become fragrant.

    Cook Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook, breaking it apart with a spoon, until it's browned and no longer pink, about 5-7 minutes.

      Add Garlic and Spices: Stir in the minced garlic, smoked paprika, cumin, oregano, salt, and pepper. Cook for about 1 minute until the garlic is fragrant.

        Incorporate Sweet Potatoes: Add the diced sweet potatoes to the skillet and stir well to combine. Pour in the chicken broth, bring to a gentle simmer, and cover. Allow to cook for about 10-15 minutes, or until the sweet potatoes are tender, stirring occasionally.

          Add Greens: Once the sweet potatoes are tender, mix in the chopped kale or spinach. Cook for an additional 3-5 minutes until the greens are wilted and heated through.

            Serve and Garnish: Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
