1 lb ground turkey

2 tablespoons olive oil

1 medium onion, diced

2 cloves garlic, minced

1 medium bell pepper, diced (any color)

1 zucchini, chopped

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 teaspoon dried basil

1 teaspoon dried oregano

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup low-sodium chicken broth

2 cups baby spinach

1 cup cooked quinoa (optional for extra fiber)

Fresh parsley, chopped for garnish

Instructions
 

Heat the Skillet: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent.

    Cook the Turkey: Add the ground turkey to the skillet. Break it apart with a spatula and cook until it is browned and cooked through, approximately 6-7 minutes. Season with salt, pepper, smoked paprika, dried basil, and oregano.

      Add the Vegetables: Stir in the minced garlic, diced bell pepper, and chopped zucchini. Sauté for about 5 minutes until the vegetables start to soften.

        Incorporate Tomatoes and Corn: Add the cherry tomatoes and corn; stir well to combine. Continue cooking for another 3-4 minutes.

          Add Liquid and Spinach: Pour in the chicken broth and bring the mixture to a simmer. Once simmering, stir in the baby spinach and cook until wilted, about 2 minutes. If you’re using cooked quinoa, add it now and stir to combine.

            Finishing Touches: Taste and adjust seasoning. Remove from heat and let it sit for a couple of minutes.

              Serve: Garnish with fresh parsley before serving. Serve hot, directly from the skillet, for a cozy family dinner.
