1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

1 can (14.5 oz) diced tomatoes (with juices)

2 cups low-sodium chicken broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon cayenne pepper (adjust for heat preference)

Salt and black pepper to taste

1 tablespoon olive oil

Fresh cilantro and lime wedges for garnish (optional)

Shredded cheese and sour cream for serving (optional)

Instructions
 

In a large skillet over medium heat, heat the olive oil. Add the chopped onion and cook until soft, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

    In the slow cooker, combine the browned onions and garlic, chicken thighs, black beans, kidney beans, pinto beans, diced tomatoes (with juices), red bell pepper, green bell pepper, chicken broth, chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper, salt, and black pepper. Mix well to combine all the ingredients.

      Cover the slow cooker and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is cooked through and tender.

        About 30 minutes before serving, taste the chili and adjust seasonings if necessary, adding more salt, pepper, or chili powder according to your taste.

          Once the chili is ready, shred the chicken thighs directly in the slow cooker using two forks. Stir well to incorporate the chicken into the chili.

            Serve hot! Ladle the chili into bowls and top with fresh cilantro, a squeeze of lime, shredded cheese, and a dollop of sour cream if desired.
