1 pound (450g) smoked sausage or Italian sausage (sliced into 1/2 inch pieces)

2 cups broccoli florets

1 red bell pepper (sliced into strips)

1 yellow bell pepper (sliced into strips)

1 medium zucchini (sliced into half-moons)

1 cup cherry tomatoes (halved)

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley (for garnish, optional)

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). This high temperature will help the veggies roast beautifully.

    Prep the Veggies: In a large bowl, combine the broccoli, red and yellow bell peppers, zucchini, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, and season with garlic powder, paprika, oregano, onion powder, salt, and pepper. Toss well to ensure every piece is coated with the seasoning.
