Shrimp Alfredo Zucchini Noodles

2 medium zucchinis, spiralized into noodles (zoodles)

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Fresh parsley, chopped, for garnish

Zest of 1 lemon for brightness

Juice of 1/2 lemon, to taste

Prepare the Zoodles: Using a spiralizer, create zucchini noodles and set them aside. You can also buy pre-spiralized zucchini noodles if you prefer a quicker option.

    Sauté the Shrimp: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and season with salt, pepper, and red pepper flakes (if using). Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove shrimp from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Pour in the heavy cream and bring it to a gentle simmer, stirring frequently.

        Incorporate Cheese: Gradually whisk in grated Parmesan cheese until the sauce is smooth and creamy. If the sauce is too thick, you can add a splash of reserved pasta water or a little more cream to reach your desired consistency.

          Combine Zoodles and Shrimp: Add the spiralized zucchini noodles to the skillet, tossing them gently to coat with the Alfredo sauce. Cook for about 2-3 minutes, just until the zoodles are tender but still have a slight crunch. Return the cooked shrimp to the skillet, mixing them in with the zoodles.

            Finish the Dish: Stir in the lemon zest and lemon juice, adjusting to taste. Remove from heat, and taste for seasoning, adding additional salt, pepper or lemon juice if needed.
