Shrimp Avocado Salad

Ingredients
  

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

2 teaspoons taco seasoning

1 ripe avocado, diced

1 cup cherry tomatoes, halved

½ cup red onion, finely chopped

1 cup corn (fresh or frozen and thawed)

¼ cup fresh cilantro, chopped

1 lime, juiced

Salt and pepper, to taste

Optional: 1 jalapeño, finely chopped (for extra heat)

Instructions
 

Prepare the Shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil and taco seasoning until well coated. Set aside to marinate for about 15 minutes.

    Cook the Shrimp: Heat a skillet over medium-high heat. Once hot, add the seasoned shrimp and cook for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat and let them cool slightly.

      Mix the Salad: In a large serving bowl, combine the diced avocado, cherry tomatoes, red onion, corn, and chopped cilantro.

        Add the Shrimp: Once the shrimp are cool, add them to the bowl with the salad mixture.

          Dress the Salad: Drizzle the lime juice over the salad, and season with salt, pepper, and jalapeño (if using). Gently toss all the ingredients together until well mixed, being careful not to mash the avocado.

            Serve: Divide the shrimp avocado salad into individual bowls or plates. Serve immediately, or refrigerate for about 30 minutes if you prefer a chilled salad.
