Shrimp Dirty Rice

1 lb large shrimp, peeled and deveined

1 cup long-grain white rice

2 ½ cups chicken broth

½ cup finely chopped onion

½ cup finely chopped green bell pepper

½ cup finely chopped celery

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon dried thyme

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

1 cup cooked and crumbled smoked sausage (optional)

2 green onions, sliced (for garnish)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Rice: In a medium saucepan, bring the chicken broth to a boil. Add the rice, reduce heat to low, cover, and simmer for about 18 to 20 minutes, or until the rice is tender and liquid is absorbed. Remove from heat and let it stand covered for another 5 minutes.

    Sauté the Vegetables: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the onions, bell peppers, and celery. Sauté for about 5 minutes until the vegetables are softened.

      Add Garlic and Spices: Stir in the minced garlic, Cajun seasoning, thyme, smoked paprika, and cayenne pepper. Cook for another 2 minutes until fragrant.

        Cook the Sausage: If using, add the cooked sausage to the skillet and stir well to combine. Allow it to heat through (about 3 minutes).

          Add Shrimp: Gently fold in the shrimp. Cook for 4-5 minutes, or until the shrimp are pink and opaque, stirring occasionally.

            Combine Rice: Fluff the cooked rice with a fork and gently fold it into the skillet with the shrimp mixture. Mix well to combine, adding salt and black pepper to taste.
