12 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 tablespoons extra virgin olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 lemon, juiced and zested

1/2 cup dry white wine (or chicken broth)

1/4 cup fresh parsley, chopped

Salt and freshly ground black pepper to taste

Grated Parmesan cheese for serving (optional)

Instructions
 

Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the linguine and set aside.

    Prepare the Shrimp: In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium heat. Once hot, add the shrimp and season with salt and pepper. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining olive oil and butter. Add minced garlic and red pepper flakes; sauté for about 1 minute until the garlic is fragrant, being careful not to burn it.

        Add Wine and Lemon: Pour in the white wine (or chicken broth) and bring it to a simmer. Let it cook for about 2-3 minutes to reduce slightly. Stir in the lemon juice and zest.

          Combine Ingredients: Return the cooked shrimp to the skillet, adding the drained linguine as well. Toss everything together until the pasta is well coated in the sauce. If the mixture seems dry, add a bit of the reserved pasta water until the desired consistency is reached.

            Finish and Garnish: Remove from heat, stir in the chopped parsley, and adjust seasoning with additional salt and pepper to taste.

              Serve: Plate the linguine and shrimp scampi. If desired, top with grated Parmesan cheese and a wedge of lemon for garnish.
