Shrimp Tacos with Blueberry Slaw

For the Shrimp:

1 lb (450g) large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn or flour tortillas

For the Blueberry Slaw:

2 cups green cabbage, finely shredded

1 cup purple cabbage, finely shredded

1 cup fresh blueberries

1/4 cup red onion, thinly sliced

1/4 cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or maple syrup

1 tablespoon lime juice

Salt and pepper, to taste

For Garnish:

Fresh lime wedges

Extra blueberries

Sliced jalapeños (optional)

Prepare the Shrimp:

    - In a medium bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Toss shrimp in the marinade until well-coated. Allow to marinate for at least 15 minutes or up to 1 hour in the refrigerator.

      Make the Blueberry Slaw:

        - In a large bowl, combine the shredded green cabbage, purple cabbage, fresh blueberries, red onion, and cilantro. In a small bowl, whisk together apple cider vinegar, honey or maple syrup, lime juice, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Let it sit for at least 10 minutes to allow the flavors to meld.

          Cook the Shrimp:

            - Heat a skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on each side or until the shrimp are opaque and cooked through (they should curl into a C shape). Remove from heat.

              Warm the Tortillas:

                - In the same skillet, warm the tortillas for about 30 seconds on each side until pliable. You can also warm them on a grill or stovetop directly over a flame for a charred flavor.
