Simple Chicken Fajita Bowl with Rice

1 lb (450g) boneless, skinless chicken breasts, sliced into strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cups cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

Juice of 1 lime

Fresh cilantro, chopped for garnish

Optional toppings: avocado slices, sour cream, shredded cheese, salsa

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes, or up to 2 hours for more flavor in the fridge.

    Cook the Chicken: In a large skillet over medium-high heat, add the marinated chicken. Sauté for about 5-7 minutes or until the chicken is cooked through and no longer pink. Remove from the skillet and set aside.

      Sauté the Vegetables: In the same skillet, add a little more olive oil if needed, and toss in the sliced onions and bell peppers. Cook for about 5 minutes or until they are tender and slightly charred.
