Skillet Lemon Parmesan Chicken Thighs

4 bone-in, skin-on chicken thighs

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 tablespoon olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

½ cup chicken broth

Juice and zest of 1 lemon

⅓ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Prepare the Chicken: Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, and garlic powder, ensuring an even distribution.

    Heat the Skillet: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat until hot but not smoking.

      Cook the Chicken: Place the chicken thighs skin-side down in the skillet. Sear for 5-7 minutes until the skin is golden brown and crispy. Carefully flip the chicken thighs and cook for an additional 5 minutes.

        Add the Garlic: Next, add the minced garlic to the skillet. Sauté for 30 seconds until fragrant, being careful not to burn the garlic.

          Deglaze & Add Flavor: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Stir in the lemon juice and zest, bringing everything to a light simmer.

            Incorporate the Cheese: Sprinkle the grated Parmesan cheese over the chicken. Reduce heat to medium-low and cover the skillet. Let it cook for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the cheese has melted.

              Finish with Butter: Remove the skillet from heat, and stir in the remaining tablespoon of butter for extra richness. Allow to sit for 5 minutes.
