Ingredients

4 boneless, skinless chicken breasts

1 cup balsamic vinegar

1 cup cherry tomatoes, halved

1 medium onion, sliced

4 cloves garlic, minced

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

Fresh basil for garnish

Cooked rice or pasta for serving (optional)

Instructions

Prepare the Chicken: Season the chicken breasts generously with salt and pepper on both sides.

Make the Marinade: In a small bowl, whisk together the balsamic vinegar, honey, olive oil, oregano, and basil. Set aside.

Layer the Ingredients: Place the sliced onion at the bottom of the slow cooker, followed by the minced garlic and halved cherry tomatoes. Lay the seasoned chicken breasts on top.

Add the Marinade: Pour the balsamic mixture over the chicken, ensuring it's well coated.

Slow Cook: Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and cooked through.

Serve: Once cooked, shred the chicken if desired, and serve it over cooked rice or pasta. Spoon the delicious balsamic sauce and burst tomatoes from the slow cooker over the top.

Garnish: Finish with freshly chopped basil for a burst of flavor.
