Ingredients

2 lbs boneless, skinless chicken thighs

1 cup BBQ sauce (your favorite brand)

1/2 cup chicken broth

1 tablespoon brown sugar

1 tablespoon apple cider vinegar

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice preference)

Salt and pepper to taste

12 mini slider buns

1 cup coleslaw (store-bought or homemade)

Sliced pickles (for garnish)

Fresh parsley (for garnish)

Instructions

Prepare the Chicken:

    - Season the chicken thighs with salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne pepper.

      Slow Cook:

        - Place the seasoned chicken thighs in the slow cooker. In a separate bowl, mix the BBQ sauce, chicken broth, brown sugar, and apple cider vinegar. Pour this mixture over the chicken.

          Set the Cooker:

            - Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shred apart with a fork.

              Shred the Chicken:

                - Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken back to the slow cooker and stir it into the sauce. Let it simmer for an additional 30 minutes on low to absorb the flavors.

                  Prepare the Sliders:

                    - While the chicken is simmering, lightly toast the mini slider buns under the broiler for about 2 minutes until golden.

                      Assemble the Sliders:

                        - On the bottom half of each toasted slider bun, place a generous spoonful of the BBQ chicken mixture. Top with coleslaw, a couple of pickles, and the top half of the slider bun.

                          Serve:

                            - Arrange the sliders on a serving platter and garnish with fresh parsley. Serve warm and enjoy!
