Ingredients

6 bone-in, skin-on chicken thighs

1/2 cup honey

1/3 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken: Rinse the chicken thighs under cold water and pat them dry with paper towels. Season generously with salt and pepper on both sides.

Mix the Sauce: In a medium mixing bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes until well combined.

Sear the Chicken (Optional): If desired, heat a large skillet over medium-high heat. Add a drizzle of oil and sear the chicken thighs skin-side down for about 4-5 minutes until browned. Flip and sear the other side for 2-3 minutes. This step adds an extra layer of flavor but can be skipped for a quicker prep.

Set Up the Slow Cooker: Place the chicken thighs in the slow cooker, skin-side up. Pour the honey garlic sauce evenly over the chicken thighs, ensuring they’re well coated.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily falls off the bone.

Thicken the Sauce (Optional): If you prefer a thicker sauce, you can transfer the sauce to a saucepan after removing the chicken. Bring it to a simmer over medium heat and let it reduce for about 10 minutes. Return to the chicken or drizzle over when serving.

Serve: Once cooked, remove the chicken thighs from the slow cooker and let them rest for a few minutes. Serve hot, garnished with sliced green onions and a sprinkle of sesame seeds. Pair with steamed rice or veggies to soak up the delicious sauce.
