1 lb (450g) ground turkey

1 medium onion, diced

3 garlic cloves, minced

1 medium red bell pepper, diced

1 medium green bell pepper, diced

2 medium sweet potatoes, peeled and cubed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

2 cups low-sodium chicken broth

3 tbsp chili powder

2 tsp ground cumin

1 tsp smoked paprika

1 tsp salt (adjust to taste)

½ tsp black pepper

1 tsp dried oregano

¼ cup fresh cilantro, chopped (optional for garnish)

1 avocado, diced (for serving)

Sour cream (optional for serving)

Instructions
 

Prepare the Ingredients: Start by dicing the onion and bell peppers, peeling and cubing the sweet potatoes, and mincing the garlic.

    Brown the Turkey: In a large skillet over medium heat, cook the ground turkey until it’s browned and cooked through, about 5-7 minutes. Use a spatula to break it apart as it cooks. Drain any excess fat.

      Sauté the Vegetables: In the same skillet, add the diced onions, garlic, and bell peppers. Sauté for about 5 minutes, until the onions become translucent and the peppers soften.

        Combine the Base: Transfer the browned turkey and sautéed vegetables into the slow cooker.

          Add the Remaining Ingredients: To the slow cooker, add the cubed sweet potatoes, kidney beans, black beans, diced tomatoes (with juices), chicken broth, chili powder, cumin, smoked paprika, salt, black pepper, and oregano. Stir well to combine.
