Ingredients

1 lb ground beef

1 cup diced salami

1 cup diced pepperoni

1 cup diced ham

1 large onion, chopped

3 cloves garlic, minced

1 can (28 oz) fire-roasted diced tomatoes

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup beef broth

2 tbsp chili powder

1 tbsp smoked paprika

1 tbsp brown sugar

1 tsp cumin

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

1 cup shredded cheddar cheese (for topping)

1/2 cup sliced black olives (for garnish)

1/2 cup diced green onions (for garnish)

Crusty bread or tortilla chips (for serving)

Instructions

Brown the Meats: In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat. Add the browned beef to the slow cooker.

Combine the Ingredients: To the slow cooker, add the diced salami, pepperoni, diced ham, chopped onion, and minced garlic. Stir to combine all the ingredients.

Add the Liquids: Pour in the fire-roasted diced tomatoes, kidney beans, black beans, and beef broth. Stir well to incorporate the meats and beans evenly.

Season the Chili: Sprinkle in the chili powder, smoked paprika, brown sugar, cumin, red pepper flakes, salt, and pepper. Mix until everything is well-seasoned.

Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours, stirring occasionally if possible.

Final Touches: Once done, taste and adjust seasoning if necessary. You can also add water or broth if you prefer a thinner consistency.

Serve and Garnish: Ladle the chili into bowls, top with shredded cheddar cheese, olives, and green onions. Serve with crusty bread or tortilla chips for dipping.
