Slow Cooker Creamy Chicken & Noodles

2 lbs boneless, skinless chicken thighs

4 cups low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 cups celery, diced

1 tsp dried thyme

1 tsp dried parsley

1/2 tsp black pepper

1/4 cup cream cheese, softened

1 cup heavy cream

2 cups egg noodles

Salt to taste

Chopped fresh parsley for garnish

Instructions
 

Prepare the Chicken: Place the boneless, skinless chicken thighs at the bottom of the slow cooker. Season with salt, black pepper, thyme, and parsley.

    Add Vegetables: Layer the diced onion, minced garlic, sliced carrots, and diced celery on top of the chicken.

      Pour in Broth: Pour the chicken broth over the top of the chicken and vegetables. This will infuse the dish with flavor during the slow cooking process.

        Slow Cook: Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours, until the chicken is tender and easily shredded with a fork.
