Slow Cooker Neapolitan Chili

1 pound ground beef or Italian sausage

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

2 large carrots, diced

1 can (14.5 ounces) diced tomatoes, undrained

1 can (15 ounces) tomato sauce

1 can (15 ounces) tomato paste

1 cup beef broth

1 tablespoon dried basil

2 teaspoons dried oregano

1 teaspoon sugar

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional, for heat)

1 cup cannellini beans (or kidney beans), drained and rinsed

1 cup fresh basil leaves, chopped (for garnish)

Grated Parmesan cheese (for serving)

Cooked pasta (spaghetti or another type, optional for serving)

Instructions
 

In a skillet over medium heat, brown the ground beef or Italian sausage until fully cooked. Drain excess fat.

    Transfer the cooked meat to the slow cooker. Add the chopped onion, garlic, diced bell pepper, diced carrots, diced tomatoes, tomato sauce, and tomato paste to the slow cooker.

      Pour in the beef broth and stir in the dried basil, dried oregano, sugar, salt, black pepper, and red pepper flakes (if using). Mix well until everything is combined.

        Cover the slow cooker with the lid and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.

          About 30 minutes before serving, stir in the cannellini beans. Allow to heat through.

            Taste and adjust seasoning if necessary before serving.

              Serve hot, garnished with fresh chopped basil and a sprinkle of grated Parmesan cheese. Alternatively, serve over cooked pasta for a heartier meal.
