2 lbs pork shoulder, cut into 1-inch cubes

2 cups fresh pumpkin, peeled and diced

2 large apples (such as Honeycrisp or Granny Smith), cored and chopped

1 large onion, diced

4 cloves garlic, minced

4 cups low-sodium chicken broth

2 tsp ground cinnamon

1 tsp ground nutmeg

1 tsp ground ginger

1 tsp salt

½ tsp black pepper

1 tbsp olive oil

2 tbsp maple syrup (optional, for added sweetness)

Fresh thyme or parsley for garnish

Sear the Pork: In a large skillet, heat the olive oil over medium-high heat. Season the pork cubes with salt and pepper, then add them to the skillet in batches. Sear until golden brown on all sides (about 5-6 minutes). Transfer the pork to the slow cooker.
