Slow Cooker Taco Rice Bowls

1 pound ground beef or turkey

1 small onion, diced

3 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn kernels, drained

1 can (14.5 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 cup long-grain white rice, rinsed

2 cups chicken or vegetable broth

1 cup shredded cheddar cheese

1 avocado, diced

1 cup sour cream

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper to taste

Prepare the Base: In a skillet over medium heat, brown the ground beef or turkey. Add the diced onion and minced garlic, cooking until the onion is translucent, about 3-4 minutes. Season with salt and pepper to taste. Drain any excess fat.

    Slow Cooker Assembly: Transfer the cooked meat mixture to the slow cooker. Then, add the black beans, corn, diced tomatoes with their juices, taco seasoning, rice, and chicken or vegetable broth. Stir everything together until well combined.

      Cook: Cover the slow cooker with a lid and set it on low for 4-6 hours or high for 2-3 hours until the rice is tender and has absorbed the flavors.

        Finish with Cheese: About 15 minutes before serving, sprinkle the shredded cheddar cheese on top of the mixture in the slow cooker. Cover and allow the cheese to melt.
