8 oz (225g) fettuccine or spaghetti

4 oz (115g) smoked salmon, sliced

2 tablespoons olive oil

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

1 tablespoon fresh dill, chopped (plus extra for garnish)

Zest and juice of 1 lemon

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to let it brown.

      Make the Cream Sauce: Reduce the heat to low and pour in the heavy cream. Stir in the Dijon mustard, chopped dill, lemon zest, and lemon juice. Let the mixture simmer gently for 2-3 minutes, allowing the flavors to meld.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss well to combine. Gradually add some reserved pasta water, a little at a time, until you reach your desired sauce consistency.

          Add Smoked Salmon: Gently fold in the smoked salmon, allowing it to warm through without cooking, about 2-3 minutes. Season with salt and pepper to taste.

            Serve: Divide the pasta among plates, garnishing with extra fresh dill and a generous sprinkle of grated Parmesan cheese.
