Ingredients

4 medium sweet potatoes, peeled and cut into 1-inch thick rounds

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh cilantro, chopped for garnish

Lime wedges for serving

Instructions

Preheat the Grill: Heat your grill to medium-high (about 400°F/200°C). If using a charcoal grill, make sure the coals are glowing red.

Prepare the Sweet Potatoes: In a large mixing bowl, combine the sweet potato rounds with olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper. Toss well to ensure all the pieces are evenly coated with the seasoning mix.

Grill the Sweet Potatoes: Once the grill is hot, lightly oil the grill grates or use a grill basket to prevent sticking. Place the sweet potato rounds directly on the grill. Close the lid and cook for about 6-8 minutes on one side.

Flip and Continue Grilling: Carefully flip the sweet potatoes using tongs. Grill for an additional 6-8 minutes, or until the sweet potatoes are tender and have nice grill marks. You can check doneness by inserting a fork; it should go in easily.

Serve: Once cooked, remove the sweet potatoes from the grill and transfer them to a serving platter. Garnish with freshly chopped cilantro and serve with lime wedges for a zesty finish.

Enjoy: Enjoy your smoky grilled sweet potatoes as a delicious side dish or a snack!
