2 pounds Yukon gold potatoes, peeled and quartered

1 cup sour cream (preferably full-fat)

4 tablespoons unsalted butter

1/2 cup whole milk (or more for desired consistency)

1/4 cup fresh chives, finely chopped

Salt and pepper to taste

1/4 teaspoon garlic powder (optional)

1/4 teaspoon onion powder (optional)

Instructions
 

Boil the Potatoes: In a large pot, place the peeled and quartered Yukon gold potatoes. Cover them with cold water, add a generous pinch of salt, and bring to a boil over medium-high heat. Once boiling, reduce the heat to medium and cook until tender, about 15-20 minutes.

    Drain and Dry: Once the potatoes are fork-tender, drain them well and return them to the pot. Allow them to sit for a couple of minutes to steam dry. This will help achieve a creamier texture.

      Mash the Potatoes: Using a potato masher or hand mixer, begin mashing the potatoes to your desired consistency.

        Incorporate Creaminess: Add in the unsalted butter and mix until melted. Then, pour in the sour cream and whole milk. If you prefer a lighter texture, you can add more milk gradually until you reach your desired creaminess.
