1 medium head of green cabbage, chopped

1 lb smoked sausage (such as kielbasa or andouille), sliced

4 slices of thick-cut bacon, chopped

1 medium onion, diced

3 cloves garlic, minced

1 tsp red pepper flakes (adjust to taste)

1 tsp black pepper

1 tsp salt (or to taste)

1 tbsp apple cider vinegar

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Begin by removing the outer leaves of the cabbage, then chop it into ribbons. Slice the sausage into bite-sized pieces and chop the bacon into small bits. Dice the onion and mince the garlic.

    Cook the Bacon: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5 minutes. Remove the bacon pieces and set them aside, leaving the rendered fat in the pan.

      Sauté the Sausage: In the same skillet, add the sliced sausage to the bacon grease. Sauté for about 5-7 minutes until browned and slightly crispy. Remove the sausage and set it aside with the bacon.

        Sauté the Vegetables: In the same skillet, add the diced onion and cook for 3-4 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

          Add the Cabbage: Begin adding the chopped cabbage to the skillet, stirring well to combine. Season with salt and black pepper. Cook the cabbage, stirring occasionally, for about 10-15 minutes or until the cabbage is tender and starts to caramelize.

            Combine Everything: Once the cabbage is cooked to your liking, stir in the reserved sausage and bacon. Drizzle apple cider vinegar over the mixture and toss well to combine all the flavors.
