Ingredients
  

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 avocado, diced

1 small red onion, finely chopped

1 cup diced cucumber

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1/4 cup olive oil

2 tablespoons lime juice

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

Optional: Tortilla strips for crunch

Prepare the Dressing: In a small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper until well combined. Set aside.

    Combine Salad Ingredients: In a large salad bowl, add the black beans, corn, diced red bell pepper, cherry tomatoes, diced avocado, red onion, cucumber, and shredded cheddar cheese. Toss gently to combine.

      Add Dressing: Pour the dressing over the salad mixture and toss again to ensure everything is evenly coated.

        Garnish and Serve: Sprinkle the chopped cilantro over the top and lightly toss again. If desired, top with tortilla strips for added crunch.
