1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper, to taste

1 small onion, finely chopped

3 cloves garlic, minced

1 (14 oz) can crushed tomatoes

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh basil leaves, chopped (for garnish)

Grated Parmesan cheese (for serving, optional)

Instructions
 

Prepare the Squash: Preheat the oven to 400°F (200°C). Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the insides with olive oil, and sprinkle with salt and pepper. Place the squash cut-side down on a baking sheet lined with parchment paper.

    Roast the Squash: Roast in the preheated oven for 30-40 minutes, or until the flesh is fork-tender. Once cooked, remove from the oven and let it cool slightly before using a fork to scrape the flesh into spaghetti-like strands. Set aside.

      Make the Marinara Sauce: In a large skillet over medium heat, add 2 tablespoons of olive oil. Sauté the chopped onion for about 5 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes, until fragrant.

        Combine Ingredients: Pour in the crushed tomatoes, and add the dried oregano, dried basil, and red pepper flakes (if using). Stir well to combine, and let the sauce simmer for 10-15 minutes to allow the flavors to meld. Adjust salt and pepper to taste.

          Serve the Dish: Add the cooked spaghetti squash strands to the marinara sauce and toss gently until they are well coated. Allow it to heat for another 2-3 minutes.

            Garnish and Enjoy: Serve the spaghetti squash garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
