12 ounces spaghetti

2 cups fresh basil leaves, packed

1/2 cup Parmesan cheese, grated

1/4 cup pine nuts (or walnuts for a twist)

2 cloves garlic, minced

1/2 cup extra-virgin olive oil

Salt and pepper, to taste

Juice of half a lemon (optional for brightness)

Cherry tomatoes, halved (for garnish)

Extra Parmesan shavings (for garnish)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

    Prepare the Pesto: In a food processor, combine the basil leaves, grated Parmesan cheese, pine nuts, and minced garlic. Pulse until finely chopped.

      Add Olive Oil: While the food processor is running, slowly drizzle in the olive oil until the mixture is well combined. Scrape down the sides as needed. If you prefer a smoother consistency, add more olive oil until desired texture is reached.

        Season the Pesto: Taste the pesto and season with salt, pepper, and lemon juice if using. Blend again to combine the flavors.

          Combine Spaghetti and Pesto: In a large mixing bowl, combine the drained spaghetti with the fresh basil pesto. If the mixture is too thick, gradually add the reserved pasta water until you reach your desired consistency.

            Serve: Plate the spaghetti and garnish with halved cherry tomatoes and extra Parmesan shavings. Optionally, drizzle a little more olive oil on top before serving.
